docs: replace cover with new Claude Obsidian branded assets

- Header: claude-obsidian-gif-cover-16x9.gif (16:9 animated cover)
- What It Does: 1x1 gif + welcome-canvas side by side
- Also adds static PNG variants (cover-16x9, cover-square) to wiki/meta/
